James has been a great chef who has taught me how to cook, which I’ve never been able to do before!  He is a great teacher showing me how to cook the tricky dishes tablet, scotch pancakes and shortbread in a short period of time – 3 hours to be exact!!!!  I have grown in confidence in the kitchen immensely – Thank you so very much James!

I attended the Modern Scottish Cookery course and found it very enjoyable and I would highly recommend to those interested.  The main benefit for me was learning new recipes in a relaxed setting and having on hand support from Chef James Welsh. I now have the confidence to make a ‘wow’ starter for friends and family and can hold my head up high at the school bake sale with fabulous shortbread and tablet.

Great food, company and a glass of wine – what more could you ask for?I learned to cook a delicious Indian meal in a small friendly group by a “Bona Fide” Indian cook.  Sufficient quality ingredients were supplied to ensure a great meal after the lesson and enough for a “Take away”.The recipe was so simple and authentic I have successfully cooked this meal for my family and friends on several occasions and always received great feedback.Certainly a great night out, an opportunity to meet new people, have an excellent dinner mid-week and a real opportunity to gain new skills, I would thoroughly recommend it to anyone and also suggest that you pop into Marks & Spencer’s on the way to “Cook at the Nook” for  a nice bottle of wine to wash your efforts down.
